Mutton curry with cucumber salad

Ingredients

  • 1 leg of mutton
  • 1 tbsp salt, plus extra to taste
  • 4 tbsp white malt vinegar
  • 6 large red dried chillies, soaked in hot water
  • 10 shallots, or 2 red onions
  • 6 cloves garlic
  • 2 tsp peppercorns
  • 3 tsp fennel seeds
  • 3 tsp cumin seeds
  • 3 tbsp coriander seeds
  • 3 tbsp oil
  • 2 sticks cinnamon
  • 4 whole cloves
  • 5 whole cardamom pods
  • 4 tbsp tomato pure
  • 1x400 g tin coconut milk
  • brown sugar, to taste
  • 125-150 g plain yogurt
  • boiled jasmine rice, to serve
For the cucumber salad

  • 1 cucumber, sliced
  • rock salt
  • lime or lemon juice, to taste
  • 1 red chilli, to garnish
