Ingredients

For the baklava

  • 50 g caster sugar
  • 2 tsp ground cinnamon
  • 8 sheets filo pastry
  • 175 g unsalted butter, melted
For the syrup

  • 125 g clear honey
  • 250 g caster sugar
  • 150 ml water
  • 1 cinnamon stick
  • 2 strips orange rind
  • 30 ml rose water
  • 50 ml brandy
For the ice cream

  • 110 ml double cream
  • 110 ml milk
  • 30 g skimmed milk powder
  • 150 g caster sugar
  • 350 g Greek yogurt
  • 100 g turkish delight, finely chopped diced
  • 1 punnet blackberries
