For the tart

  • 40 g unsalted butter
  • 60 g plain flour
  • 60 g ground almonds
  • 50 g demerara sugar
  • 1 lemon, zest only
  • 40 g pecans, chopped
  • 3 Bramley apples
  • 30 g caster sugar
  • 2 tbsp calvados
  • 1 ready-made pastry tart case
For the apple mascarpone

  • 3 Coxs Orange Pippin apples
  • dash lemon juice
  • 25 g caster sugar
  • 100 g mascarpone
  • 100 ml double cream, lightly whipped
