For the poussin marinade- 6 poussins
- 4 small green chillies, chopped
- 3 limes, juice only
- 150 ml extra virgin olive oil
- 3 tsp Dijon mustard
- 3 tsp honey
- 6 cloves spring garlic, crushed
- 1/2 bunches coriander, very finely chopped
- 1/2 tsp freshly ground black pepper
- 2 tbsp peanut oil
- 120 g pumpkin seeds
- 2 Hass medium avocado
- 3 limes, juice only
- 1/4 tsp coarse sea salt
- freshly ground black pepper
- 100 ml extra virgin olive oil
- 4 tbsp finely chopped coriander
- 2 tbsp snipped chives
- 1.5 tbsp minced pasilla chillies, (available in specialist Mexican stores)
