  • 1 lemons, juice
  • 2 Comice pears, peeled, cored and chopped
  • 50 ml schnapps, pear flavour
  • 1 tbsp thyme, leaves onlychopped
  • 175 g goats' cheese
  • 275 g puff pastry
  • 1 pinches sea salt and coarsely ground black pepper
  • 1 egg yolks
For the garnish

  • 2 handfuls watercress
  • 1 tbsp walnut oil
