  • 225 ml white wine or sherry
  • 4 tbsp brandy
  • 50 g vanilla sugar
  • 300 ml double cream
  • finely grated zest and juice of 1 lemons
  • pinch of freshly grated nutmeg
  • 4-6 tbsp raspberry jam
  • handful of toasted flaked almonds
For the custard:

  • 2 eggs, plus 2 yolks
  • 1 tbsp cornflour
  • 300 ml milk
  • 300 ml double cream
  • 60 g caster sugar
