Passion-fruit tart with black vodka and lime sorbet

Ingredients

  • 225 g plain flour
  • 115 g butter
  • 2 egg yolks
  • 3 tbsp cold water
For the filling:

  • 190 ml passion fruit pure
  • 40 ml fresh lime juice
  • 40 ml lemon juice
  • 250 g sugar
  • 8 eggs
  • 425 ml whipping cream
  • icing sugar, for caramelising
For the sorbet:

  • 450 ml water
  • 450 ml sugar
  • grated zest and juice of 2 limes
  • 8 tbsp black vodka
  • 375 ml tonic water
To serve:

  • summer berries
  • tuiles
  • sprigs mint
