- 1 carrot, grated
- 6 thai lime leaves, finely sliced, stalks removed
- 6 tbsp olive oil
- 30 g wasabi
- 2 tbsp mirin, (Japanese rice vinegar)
- juice of 1 limes
- 6 tbsp chopped coriander
- black pepper
- wedges of limes, to garnish
- rocket, to garnish
