  • 4 pork fillets, (about 115g each)
  • 8 slices Parma ham
  • 2 tbsp Dijon mustard
  • 12 sage leaves
  • 200 ml white wine
  • 300 ml vegetable stock
  • 2 cloves garlic, chopped
  • 4 apples, sliced
  • 1 tsp sugar
Red cabbage coleslaw

  • 01/2 red cabbage, shredded
  • 2 carrots, grated
  • 1 onion, finely chopped
  • 1 clove garlic, finely chopped
  • 2 tbsp olive oil
  • 01 lemon, juice only
  • 4 tbsp mayonnaise
  • black pepper
