1 lemon zest

1 teaspoon kosher salt
1 to 2 tablespoons olive oil
1/2 cup basil leaves
1/4 cup Parmesan cheese, grated

Tomato Sauce:

1/4 cup olive oil
1 large spanish onion, finely diced (1 cup)
6 cloves garlic , sliced
1 1/2 teaspoons kosher salt, or more to taste
2 28-oz cans San Marzano tomatoes, with their juice
1 cup dry white wine
1 bay leaf
1 tablespoon fresh oregano leaves, OR 1 teaspoon dried oregano
1/4 teaspoon black pepper
1 tablespoon crushed red pepper flakes, (optional)
