- 3 cups water
- 1 1/2 pounds white or yellow onions, chopped (3 cups)
- 3 tablespoons olive oil
- 1 1/2 teaspoons salt, divided
- 5 large garlic cloves, finely chopped
- 1 1/2 teaspoons ground cumin
- 3 pounds ground turkey (preferably dark meat, and preferably coarsely ground)
- 1 (14.5-ounce) can pureed tomatoes
- 1 large red bell pepper, diced
- 1 tablespoon cornmeal
- 1 (15-ounce) can pinto beans, rinsed and drained
- 1 (15.5-ounce) can hominy, rinsed and drained
- 1/2 cup chopped cilantro
- Garnish: additional chopped cilantro
