  • 1 yellow bell pepper, cut in 8 strips
  • 11/3 cups (4 oz) mushrooms, cut in half
  • 2 Tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 pkg (9 oz) fresh linguine pasta
  • 1/2 cup bottled red-wine vinaigrette
  • 2 Tbsp reduced-sodium soy sauce
  • 1 Tbsp minced fresh ginger
  • 2 tsp minced garlic
  • 1/2 cup packed basil leaves, cut in thin strips
  • 1/3 cup unsalted roasted peanuts
