- 1/4 cup chipotle peppers in adobo sauce
- 1/4 white onion, coarsely chopped
- 2 tablespoons olive oil
- 4 garlic cloves, peeled
- 1 tablespoons apple cider vinegar
- 1 teaspoon chili powder
- 1 teaspoon dried oregano
- 1 teaspoon kosher salt
- 1-2 tablespoons water (optional)
- 1 pound pork tenderloin, trimmed of fat and sinew, halved lengthwise
- For the salsa:
- 2 large tomatoes, cut into 1/2-inch-thick slices
- 1/2 red onion, cut into 1/2-inch-thick slices
- 1 green jalapeno chili, halved and seeded
- 2 tablespoons olive oil, divided
- Kosher salt and freshly ground black pepper
- 2 tablespoons chopped cilantro
- 1 tablespoon fresh lime juice
- For the tacos:
- 8 6-inch corn tortillas
- 8 radishes, thinly sliced
- Chopped cilantro, for garnish
- 1 lime
