- 2 large eggs
- 1 tablespoon vanilla extract
- 2/3 cup packed light- or dark-brown sugar
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1 pound apples, peeled, quartered, cored and chopped in 1/2-inch pieces (3 cups)
- 2/3 cup (31/2 ounces) snipped pitted dates
- 2/3 cup pecans; coarsely chop about half
- PASTRY FOR SINGLE-CRUST PIE
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1/4 cup solid vegetable shortening
- 11/2 tablespoons butter or margarine (not spread), chilled and cut in small pieces
- 3 tablespoons ice-cold water
