Apple, Date & Pecan Pie

Ingredients

  • Pastry for single-crust pie (recipe follows)
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2/3 cup packed light- or dark-brown sugar
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 pound apples, peeled, quartered, cored and chopped in 1/2-inch pieces (3 cups)
  • 2/3 cup (31/2 ounces) snipped pitted dates
  • 2/3 cup pecans; coarsely chop about half
  • PASTRY FOR SINGLE-CRUST PIE
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1/4 cup solid vegetable shortening
  • 11/2 tablespoons butter or margarine (not spread), chilled and cut in small pieces
  • 3 tablespoons ice-cold water
