  • 2 small eggplant (about 10 ounces each), peeled and cut into 1/4-inch-thick slices
  • 5 egg
  • 3/4 cup seasoned dry bread crumbs
  • 1 cup freshly grated Parmesan cheese
  • 1/3 cup olive oil
  • 1/4 cup mayonnaise
  • 1/4 cup chopped parsley
  • 3 ounce prosciutto or ham, chopped
  • 2 package (9 ounces each) frozen artichoke heart , prepared according to package directions and cut in half
  • ground black pepper
  • 2 1/2 cup tomato sauce
  • 1 can (10 3/4 ounces) condensed tomato soup
  • 1/4 cup sour cream
