Shrimp, Avocado & Grapefruit Salad

Ingredients

  • 1/4 cup fresh grapefruit juice (reserved when sectioning grapefruit as follows)
  • 2 Tbsp lemon juice
  • 2 Tbsp chopped cilantro
  • 2 tsp honey
  • 1/4 tsp each salt and pepper
  • 1/2 cup olive oil
  • Salad
  • 18 cooked extra-large shrimp, peeled with tails left on 
  • 6 large leaves romaine lettuce
  • 3 avocados, halved, peeled, pitted and thinly sliced
  • 2 pink grapefruit, peeled, sectioned over a bowl to catch juices for Dressing
  • 1/4 red onion, thinly sliced
