Asparagus & Pancetta Frittata

Ingredients

  • 5 large  eggs
  • 1/2 cup  whole milk or half-and-half
  • 1/4 cup  plus 1 tablespoons freshly grated Parmigiano Reggiano
  • 1 tablespoon  Dijon mustard
  •   Kosher salt and freshly ground black pepper
  • 1 tablespoon  olive oil
  • 1   slice (1/4 inch thick) pancetta (about 2 ounces), diced
  • 1 tablespoon  minced shallot
  •   1/4 pound thin asparagus, trimmed and sliced into 1-inch pieces on the diagonal

Description

Position An Oven Rack 4 To 6 Inches From The Broiler And Heat The Broiler On High.
