  • 8   large eggs
  • 1/2 cup  grated smoked mozzarella
  • 1 tablespoon  extra-virgin olive oil
  • 1/2 cup  diced yellow onion
  • 10 ounces  frozen artichoke hearts, thawed, and roughly chopped (1-2/3 cups)
  • 2 tablespoons  chopped fresh flat-leaf parsley
  •   Kosher salt and freshly ground black pepper
