Ingredients

  • 1 pound  asparagus, trimmed
  • 3/4 pound  sugar snap peas
  • 1 pound  assorted small new potatoes
  • 1 tablespoon  tarragon or white wine vinegar
  • 2 teaspoons  Dijon mustard
  • 1/4 cup  extra-virgin olive oil
  • 3 tablespoons  finely chopped shallot
  • 1/2 cup  torn mixed herbs (such as cilantro, basil, tarragon, chervil, and chives)
