Peanut-sesame Noodles

Ingredients

  • 1 pound  linguine or lo mein noodles
  • 3/4 cup  smooth peanut butter
  • 1/3 cup  chicken broth plus 1/3 cup water
  • 1/4 cup  rice vinegar
  • 2 tablespoons  light soy sauce
  • 2 tablespoons  sugar
  • 2 teaspoons  Asian dark sesame oil
  • 2 teaspoons  peeled ginger, finely chopped
  • 1/2 teaspoon  garlic powder
  • 1/2 teaspoon  red pepper flakes
  • 3 tablespoons  sesame seeds
  • 2   scallions, trimmed and sliced on the diagonal

Description

Serve These Spicy Lo Mein-style Noodles As A Main-dish Or Side Dish. For A Totally Vegetarian Recipe, Replace The Chicken Broth With Vegetable Broth.
