Blueberry-almond Streusel Muffins

Ingredients

  • 1/2 cup  finely chopped almonds
  • 1/4 cup  all-purpose flour
  • 1 tablespoon  packed brown sugar
  • 1 tablespoon  butter or margarine, melted
  • 1-1/4 cups  all-purpose flour
  • 1/2 cup  whole wheat flour
  • 1/2 cup  granulated sugar
  • 2-1/2 teaspoons  baking powder
  • 1/4 teaspoon  baking soda
  • 1/4 teaspoon  salt
  • 3/4 cup  light ricotta cheese
  • 1/2 cup  skim milk
  • 1/4 cup  buttermilk
  • 1   egg
  • 2 tablespoons  canola oil
  • 2 teaspoons  vanilla
  • 1/2 teaspoon  almond extract
  • 1 cup  fresh blueberries

Description

We Used Light Ricotta Cheese And Whole Wheat Flour To Cut The Fat And Add A Little Fiber To These Crumbly-topped Fruit Muffins.
