Fruited Couscous-stuffed Salmon Roast

Ingredients

  • 1 stalk  celery, chopped (1/2 cup)

  • 2/3 cup  chicken broth
  • 1/2 cup  apple cider or apple juice
  • 1/2 teaspoon  ground coriander
  • 1/4 teaspoon  ground allspice
  • 1/8 teaspoon  pepper
  • 1-1/2 cups  corn bread stuffing mix
  • 1-1/2 cups  chopped pear
  • 1/2 cup  couscous
  • 1/2 cup  golden raisins
  • 1/4 cup  snipped parsley
  • 1 3-pound  fresh salmon roast (about 8 inches long and 2-1/4 inches thick), boned, or one 4- to 5-pound whole dressed salmon (with head and tail)
  • 1 tablespoon  cooking oil
  •   Pear wedges (optional)
  •   Celery leaves (optional)
