Scallops & Snow Pea Stir-fry

Ingredients

  • 1/2 cup  chicken broth
  • 1/4 cup  orange juice
  • 2 tablespoons  fresh lemon juice
  • 2 tablespoons  soy sauce
  • 1 teaspoon  dark Asian sesame oil
  • 1 tablespoon  sugar
  • 1 tablespoon  cornstarch
  • 1/2 teaspoon  salt
  • 1 tablespoon  vegetable oil
  • 2 large  cloves garlic, finely chopped
  • 2 tablespoons  finely chopped fresh ginger
  • 1-1/2 pounds  sea scallops, halved and muscle removed
  • 1 pound  snow peas, trimmed
  •   Grated orange rind (optional)
  •   Cucumber Salad (recipe follows)
