Calabrese Pork Ragu With Fennel

Ingredients

  • 3 pounds  pork butt or shoulder (from about a 7 pounds bone-in shoulder) or 3 pounds packaged ground pork
  • 1   large yellow onion, chopped
  • 2 tablespoons  olive oil
  • 6 ounces  pancetta, finely chopped
  • 1 tablespoon  finely chopped garlic
  • 1 tablespoon  whole fennel seeds, crushed
  •   Kosher salt and freshly ground black pepper
  • 1 teaspoon  granulated sugar
  • 1 teaspoon  dried oregano
  • 1   bay leaf
  • 1 teaspoon  crushed red pepper flakes
  • 1 cup  dry white wine
  • 2 cups  canned pureed tomatoes
  • 3/4 cup  tomato paste
  • 4 tablespoons  unsalted butter
  • 1 pound  pasta, cooked al dente
  •   Freshly grated Parmigiano-Reggiano (optional)
