Mrs. Lenkh's Cheese Sables

Ingredients

  • 9 ounces  (2 cups) unbleached all-purpose flour
  • 1 tablespoon  table salt
  • 1/8 teaspoon  cayenne
  • 1/8 teaspoon  baking powder
  • 7 ounces  (14 tablespoons) cold unsalted butter, cut into chunks
  • 3-1/2 ounces  (1-1/2 cups) finely grated sharp Cheddar
  • 1-1/2 ounces  (1/2 cup) finely grated Parmigiano Reggiano
  • 1   large egg, lightly beaten
  • 1/2 cup  finely chopped pecans or walnuts (optional)
  • 1   large egg yolk mixed with a pinch of paprika and 1/2 teaspoon water, as a glaze
  •   Kosher or sea salt for sprinkling

Description

These Crackers Are Great With Drinks And Go Especially Well With Dry And Off-dry Sparkling Wines. The Dough Keeps For Two Days In The Fridge, And For Months In The Freezer (thaw It In The Fridge Before Using).
