Asparagus Scramble Biscuits


  • 8 oz.  fresh asparagus, trimmed and cut into bite-size pieces
  • 1 Tbsp.  butter
  • 12   eggs, lightly beaten
  • 1/2 tsp.  salt
  • 1/2 tsp.  cracked black pepper
  • 3/4 cup  roasted red sweet peppers, chopped
  •   Bacon-Cheddar Cornmeal Biscuits, split horizontally (recipe below)
  • 3/4 cup  shredded Swiss cheese (3 ounces)
