  • 1 cup  water
  • 1/2 cup  unsalted organic butter (1/4 pound)

  • 1 cup  grated hard aged cheese, such as Parmigiano-Reggiano, Pecorino Romano, or Asiago
  • 1/3 cup  olive oil or salad oil
  • 1/3 cup  lemon juice
  • 1 tablespoon  snipped fresh basil
  • 2 teaspoons  sugar
  • 1 teaspoon  Dijon-style mustard
  • 1 clove  garlic, minced
  • 1/8 teaspoon  ground black pepper
  • 6 cups  mesclun or mixed salad greens
