Gingered Apple Cake

Ingredients

  • 6   firm apples (2 pounds), such as Gala, peeled, cored and each cut into 8 wedges
  •   Batter:
  • 1-1/2 cups  all-purpose flour
  • 2 teaspoons  baking powder
  • 2 teaspoons  ground ginger
  • 1 teaspoon  ground cinnamon
  • 1/2 teaspoon  salt
  • 1/2 cup  (1 stick) butter, at room temperature
  • 1 cup  packed dark-brown sugar
  • 2   eggs
  • 1 teaspoon  vanilla
  • 1/2 cup  milk
  •   Garnish:
  • 1/4 cup  currant jelly, melted
  •   Whipped cream

Sauteed Apples Are The Fruit Of Choice For This Upside-down Cake. The Cinnamon And Ginger Cake Tastes Best While Still Slightly Warm And With Lots Of Whipped Cream.
