Ginger-squash Soup

Ingredients

  • 1 tablespoon  vegetable oil
  • 1 medium  onion, chopped
  • 1 package (32 ounces)  reduced-sodium chicken broth
  • 1 package (12 ounces)  cubed, peeled butternut squash or 1 pound butternut squash, peeled, seeded, and cubed (about 2-1/2 cups)
  • 1/8 teaspoon  ground black pepper
  • 1 tablespoon  honey
  • 2 teaspoons  grated fresh ginger
  •   Diced apple, optional

Description

Serve This Bright Orange Soup For Dinner Around Halloween. Top With Chopped Apples To Add Fall Flavors.
