Ingredients

  • 2 medium-size  romaine lettuce hearts, cleaned and chopped
  • 1   seedless cucumber, peeled and cut into small cubes (1 cup)
  • 3/4 cup  baby carrots, cut into 1/4-inch-thick coins
  • 1 cup  cherry tomatoes, quartered
  • 1/2 cup  crumbled goat cheese or crumbled feta cheese
  • 2 to 3 tablespoons  lemon juice
  • 2 tablespoons  white wine vinegar
  • 1 tablespoon  honey
  • 2 tablespoons  chopped fresh dill
  • 1/4 teaspoon  salt
  • 1/8 teaspoon  black pepper
  • 1/3 cup  olive oil
  • 1 large  apple (such as Cortland or Gala), cored
