- For lamb:

- Juice of 1 lemon (about 3 tbsp)
- 2 garlic cloves, minced
- 2-1/2 tsp kosher salt
- 1 tsp mustard powder
- 3/4 tsp freshly ground pepper
- 3/4 tsp celery seed
- 1/2 tsp ground nutmeg
- 1/4 tsp allspice
- 1 6-to 7-lb leg of lamb, trimmed
- 2 large fennel bulbs, each cut into 6 wedges
- 2 lemons, halved crosswise
- For Apple-Mint Chutney:
- 2 Tbsp unsalted butter
- 1 small red onion, sliced
- 2 granny smith apples, peeled, cored and cut into 1/2-inch dice
- 1/3 cup firmly packed light brown sugar
- 1/4 cup golden raisins
- 3 Tbsp apple-cider vinegar
- 1/4 tsp salt pinch ground nutmeg
- 1/3 cup chopped fresh mint
