Leg Of Lamb With Apple-mint Chutney

Ingredients

  •   For lamb:
  • 5 Tbsp  olive oil
  • 1 Tbsp  finely grated lemon zest
  •   Juice of 1 lemon (about 3 tbsp)
  • 2   garlic cloves, minced
  • 2-1/2 tsp  kosher salt
  • 1 tsp  mustard powder
  • 3/4 tsp  freshly ground pepper
  • 3/4 tsp  celery seed
  • 1/2 tsp  ground nutmeg
  • 1/4 tsp  allspice
  • 1 6-to 7-lb  leg of lamb, trimmed
  • 2 large  fennel bulbs, each cut into 6 wedges
  • 2   lemons, halved crosswise
  •   For Apple-Mint Chutney:
  • 2 Tbsp  unsalted butter
  • 1 small  red onion, sliced
  • 2   granny smith apples, peeled, cored and cut into 1/2-inch dice
  • 1/3 cup  firmly packed light brown sugar
  • 1/4 cup  golden raisins
  • 3 Tbsp  apple-cider vinegar
  • 1/4 tsp  salt pinch ground nutmeg
  • 1/3 cup  chopped fresh mint
