  • 12   eggs
  • 1   cup reduced-fat shredded cheddar cheese
  • 1/2 cup  grated Parmesan cheese
  • 1/2 teaspoon  salt
  • 1/2 teaspoon  ground nutmeg
  • 1/4 teaspoon  black pepper
  • 2 packages (10 ounces each)  frozen chopped spinach, thawed and water squeezed out
  • 2 ounces  Canadian bacon, finely chopped
