Ingredients

  • 1 cup  packed cilantro leaves (1 oz.)
  • 1 1-inch piece  fresh ginger, peeled and quartered
  • 3 cloves  garlic
  • 1 medium  jalapeno pepper, seeded and chopped (optional)
  • 1/3 cup  water
  • 1 tablespoon  cooking oil
  • 1/2 cup  chopped onion
  • 3 cups  fresh vegetables, such as green beans, cut into 1-inch strips; carrots, cut into 1-inch strips; cauliflower florets; whole kernel corn; and/or peas
  • 1/2 teaspoon  salt
  • 1/4 teaspoon  ground cinnamon
  • 1-1/2 cups  cooked rice
  • 3   green sweet peppers, halved (optional)
  • 1/2 cup  coarsely chopped cashews
  • 1 tablespoon  golden raisins
  •   Cilantro sprigs
