Paula Carson's Coconut Cake

Ingredients

  •   Cake:
  • 1 cup  (2 sticks) butter, at room temperature
  • 2 cups  sugar
  •   5 eggs
  • 3 cups  all-purpose flour, sifted
  • 1 tablespoon  baking powder
  • 1-1/4 cups  milk
  • 1 teaspoon  vanilla
  •   7-Minute Frosting:
  • 2   egg whites
  • 1-1/2 cups  sugar
  • 1/8 teaspoon  salt
  • 1/2 cup  water
  • 1 tablespoon  light corn syrup
  • 1/2 teaspoon  vanilla
  • 1/2 teaspoon  lemon extract
  • 1-1/2 cups  shredded unsweetened coconut

Description

This Three-layer Coconut Cake Is Frosted With A Classic 7-minute Frosting. Before The Frosting Sets Up, It's Slightly Sticky--all The Better For Keeping The Coconut On The Cake.
