Andouille-sausage Dressing

Ingredients

  • 2 tablespoons  olive oil
  • 1 pound  Andouille sausage, finely chopped
  • 1 cup  chopped onion
  • 1/2 cup  chopped celery
  • 1/4 cup  chopped green bell pepper
  • 1/4 cup  chopped red bell pepper
  • 1/4 cup  chopped green onion
  • 4 cloves  garlic, minced
  • 4 cups  fresh bread crumbs
  • 1 (14.5 ounce) can  diced tomatoes, undrained
  • 1 (14.5 ounce) can  chicken broth
  • 2   eggs, lightly beaten
  • 2 tablespoons  chopped fresh parsley
  • 1 teaspoon  Creole seasoning

Description

Preheat Oven To 400 Degrees F. Grease A 13-x-9-x-2-inch Baking Dish; Set Aside.
