Jollof Rice

Ingredients

  • 1/4 teaspoon  salt
  • 1/3 cup  all-purpose flour
  • 1/2 teaspoon  curry powder
  • 1/4 teaspoon  black pepper
  • 1 1-1/2-pound  boneless pork shoulder roast, cut into 1-inch cubes
  • 1/4 cup  cooking oil
  • 2 cups  chopped onion
  • 1 to 2   hot peppers, such as jalapeno or serrano, finely chopped*
  • 4 cloves  garlic, minced
  • 2 14-1/2-ounce cans  diced tomatoes with herbs
  • 2 14-1/2-ounce cans  vegetable or chicken broth
  • 1 6-ounce can  tomato paste
  • 1 cup  chopped carrots
  • 1 cup  chopped green sweet pepper
  • 2 teaspoon  dried thyme, crushed
  • 1   bay leaf
  • 1-1/4 cups  long grain rice
