Spicy Corn Salad

Ingredients

  • 3 cups  fresh corn kernels or one 16-ounce package frozen whole kernel corn
  • 3 tablespoons  red wine vinegar
  • 2 tablespoons  salad oil or olive oil
  • 1 tablespoon  snipped fresh oregano or 1 teaspoon dried oregano, crushed
  • 1/4 teaspoon  salt
  • 1/4 teaspoon  ground black pepper
  • 1 15-ounce can  black beans, rinsed and drained
  • 2 medium  red and/or green sweet peppers, cut into thin, bite-size strips
  • 2 medium  fresh jalapeno chile peppers, seeded and cut into thin, bite-size strips*
  • 4   green onions, chopped
