Ginger BBQ Pork or Chicken Stir-Fry

Ingredients

  • 2 1/2 cups chicken stock
  • 3 tablespoons vegetable oil
  • 1 cup brown rice
  • 1/4 cup ginger preserves
  • 1/4 cup hoisin sauce
  • 2 tablespoons tamari (dark soy sauce)
  • 1 tablespoon hot pepper sauce or Chinese mustard
  • 1 1/2 pounds skinless, boneless pork or chicken, cut into bite-size pieces
  • Salt and pepper
  • 1 large red bell pepper, thinly sliced
  • 1 large onion, thinly sliced
  • 2 cloves garlic, grated or finely chopped
  • 1/3 cup sliced almonds, toasted (a generous handful)
  • 2 scallions, thinly sliced
  • 1/2 green apple, chopped (optional)
