  • 1/2 cup dry white wine
  • 3 egg yolks, beaten
  • Freshly grated Parmigiano Reggiano cheese (a generous handful)
  • 2 tablespoons chopped fresh thyme (about 2 palmfuls)
  • 1 tablespoon grated lemon peel
