- 1/3 cup cilantro (a generous handful), finely chopped
- Juice of 1 lime
- 3 tablespoons butter
- 3 tablespoons flour
- 2 cups milk
- 1 cup vegetable stock or broth
- Pepper
- 1 cup Swiss cheese, shredded
- 1 cup Monterey Jack cheese, shredded
- 2 cups crushed tortilla chips, preferably flaxseed
- 1 cup pepper Jack cheese, shredded
- 1 cup crème fraîche or sour cream (optional)
