Artichokes Basted with Anchovy Butter


  • 8 each Large Artichokes, with tips of thorns cut off, and base trimmed of green
  • Juice of 2 lemons
  • 2 cups water
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 8 cloves garlic, slivered
  • 8 sprigs fresh thyme
  • 1 teaspoon crushed red pepper
  • 1/4 cup extra virgin olive oil (EVOO), plus some for additional grilling

For the anchovy butter:

  • 8 tablespoons softened butter
  • 4 salted anchovy fillets, finely chopped
  • 2 cloves garlic, finely grated with a Microplane

For seasoning and garnish:

  • 1 teaspoon sea salt, such as Fleur du Sel brand, or kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon freshly squeezed lemon juice
  • A handful of chopped parsley
