Flounder Francese With Toasted Almonds, Lemon And Capers

Ingredients

  • 2 ounces sliced almonds (1/4 cup)
  • 4 flounder fillets, 6-8 ounces each
  • Salt and pepper
  • 3 large eggs
  • A splash heavy cream
  • 4 tablespoons extra virgin olive oil (EVOO), divided
  • 3 tablespoons butter, divided
  • 1/2 cup dry white wine, (eyeball it - a couple of glugs)
  • Handful flat-leaf parsley, finely chopped
  • 1 lemon, zested and juiced
  • 3 tablespoons capers
  • 2 cloves garlic, finely chopped
  • 1 pound triple washed spinach, tough stems removed, coarsely chopped
  • 1/4 teaspoon grated or ground nutmeg, (eyeball it)
