- 2 ounces sliced almonds (1/4 cup)
- 4 flounder fillets, 6-8 ounces each
- Salt and pepper
- 3 large eggs
- A splash heavy cream
- 4 tablespoons extra virgin olive oil (EVOO), divided
- 3 tablespoons butter, divided
- 1/2 cup dry white wine, (eyeball it - a couple of glugs)
- Handful flat-leaf parsley, finely chopped
- 1 lemon, zested and juiced
- 3 tablespoons capers
- 2 cloves garlic, finely chopped
- 1 pound triple washed spinach, tough stems removed, coarsely chopped
- 1/4 teaspoon grated or ground nutmeg, (eyeball it)
