Ingredients


10–12 oz smoked turkey (or chicken), cut into bite-size pieces 1/4 cup pine nuts
1/2 cup trinity mix (fresh pre-diced onions, bell peppers, celery)
1 head Boston Bibb lettuce (5–6 oz), core removed
1 (8-oz) can pineapple tidbits (drained)
1/4 teaspoon herb-seasoned salt
1/3 cup light mayonnaise
1/8 teaspoon pepper



1 large Spanish onion (rinsed)
1 fresh jalapeño pepper (rinsed)
1 (15.5-ounce) can pinto beans (drained)
1 (15.5-ounce) can small red beans (drained)
1 tablespoon minced garlic
1 teaspoon Complete seasoning
1 tablespoon extra-virgin olive oil

1 medium red onion
2 medium yellow squash
1 medium zucchini
2 medium bell peppers
4–5 fresh basil leaves
2 tablespoons extra-virgin olive oil
1/2 teaspoon kosher salt
1/4 teaspoon pepper
1 teaspoon sugar (optional)
