Sauce:
1/4 cup soy sauce or tamari
1/4 cup sweet rice wine vinegar
1/4 cup thinly sliced scallions (green part only)
2 tsp. minced fresh ginger
2 tsp. sugar
1 to 2 red Thai bird chilies , whole or split (or 1/2 tsp. red pepper flakes)
