Cardamom Strawberry Shortcake with Cream

Ingredients

Strawberries:
2 cups hulled and chopped ripe strawberries , plus 6 cups hulled and halved ripe strawberries
6 Tbsp. honey
1 Tbsp. finely grated lemon zest
1/8 vanilla bean , split
12 lemon verbena leaves

Shortcake:
1 1/4 cups whole wheat flour
3/4 cup all-purpose flour
1 Tbsp. baking powder
1/2 tsp. ground cardamom
1/2 tsp. salt
6 Tbsp. unsalted frozen butter , cut into small pieces
2 Tbsp. lard or vegetable shortening , frozen
1/2 cup milk
3 Tbsp. honey
2 Tbsp. sour cream
1 large egg

Glaze and topping:
1 Tbsp. unsalted butter , melted
1 Tbsp. honey
1 Tbsp. raw sugar , preferably turbinado
1 cup heavy or whipping cream
1/3 cup sour cream
Lemon verbena sprigs for garnish
