Asparagus and Pea Farrotto
1/2 ounce dried porcini mushrooms
2 cups very hot water
4 cups chicken stock
2 tablespoons olive oil
2 shallots , minced
Salt and freshly ground pepper , to taste
1 1/2 cups farro (an Italian grain similar to rice)
1 tablespoon chopped fresh rosemary
1 bunch (about 1 pound) asparagus , trimmed and cut into 1-inch pieces
1 cup fresh or frozen peas
2 tablespoons butter
1/4 cup grated Parmesan cheese
1/2 cup chopped flat-leaf parsley
