Ingredients

Beet-Ginger Chutney
2 tablespoons olive oil
4 shallots , finely chopped
4 cloves garlic , minced
2 (3-inch) pieces ginger , peeled and sliced
4 beets (about 2 pounds), peeled and cut into 1/2-inch cubes
2 tablespoons honey
4 white or green cardamom pods
2 sprigs thyme
2 tablespoons sugar
1 tablespoon unsalted butter
2 cups chicken stock or broth
1/4 teaspoon salt , or to taste
