Art's Chicken Parmesan with Artichokes
4 large artichokes
1 lemon , cut in half
1 tablespoon extra-virgin olive oil
Sea salt and freshly ground pepper to taste
4 ripe tomatoes , cut into chunks
1/2 onion , coarsely chopped
1/4 cup white wine
2 large basil leaves
1 small clove garlic
1 1/2 teaspoons each fresh thyme and oregano and rosemary , chopped
1/3 cup all-purpose flour
1/3 cup plus 1/4 cup freshly grated Parmesan cheese
8 boneless skinless chicken breast halves
4 tablespoons extra-virgin olive oil
1 cup white wine
